Loaded Baked Potatoe Casserole

This recipe was used to accompany my “Soul Food Sunday” Dinner, and I must say… I could have eaten this whole pan all to myself.  I have always been a fan of Potatoes Skins, and this is what it reminded me of.  Here is how I made it:

  • 6-8 med Potatoes cut in quarters
  • 2 Tbsp Butter
  • Oscar Mayer Real Bacon Bits
  • Chives
  • Monterey Jack and Cheddar Cheese
  • Sour Cream (Optional)
  • Ranch Dressing(Optional)

Boil potatoes until they are done.  Once potatoes are cooked, drain, and pour into a casserole dish.  Melt butter, and pour over potatoes.  Season with salt and pepper.  Next add Bacon, Chives, and Cheese.  Bake for 5-10 mins or until cheese is melted.  This goes great with a dab of sour cream on top, and Ranch Dressing on the side.😋 Enjoy!!!!
