Today I was a little pressed for time on lunch and not really hungry, but I knew Lunch was not to be skipped. I decided to throw some vegetables together to make a healthy lunch. I was a little skeptical of this dish, but BOY did it turn out to be Delicious. Last week I was determined to go back on a Vegan 1 week diet, but that failed. So now I have all of these frozen and fresh vegetables that need to be eaten ASAP. The flavor of this dish is wonderful. Try it and see what you think.
Pour Olive Oil in a pot, just enough to coat the bottom of the pan. Once the pan is hot, add in your garlic and saute 1 min. Add in Kale and Spinach, and let cook for 2-3 mins untill they shrink. Add in Vegtables and Corn, and pour 1Cup of water in pot, and simmer for 20 mins. Remove pot from stove and let cool off for 5 mins, and Enjoy.

Well its been a few weeks since I have posted anything new. Its been a crazy few weeks for me, with up’s and down’s, High’s and Low’s. One thing has not changed and that is my love for cooking. I have made several new dishes over the past few days, and will be sharing those as well. One meal my family loves is BBQ Ribs. It takes a lot to make a great batch of BBQ Ribs, although I think I have found the secret to making a delicious, tender, succulent rib. If you enjoy “Fall of the Bone” ribs…Stay tunned.
Rub ribs with Brown Sugar, and Seasoning Salt. Add in Garlic and Onions, and coat well. Place Ribs in a Crockpot, and cook on Low Heat for at least 8 hrs or over night.
Preheat Oven to 350…Once your ribs have cooked, transfer to a large Aluminum Pan, making sure to pour off any juice. Add your BBQ sauce, place foil on top of ribs and place in the oven for 30 mins, allowing the sauce to soak into the ribs. Once the sauce has soaked in, turn oven up on broil, and remove foil from the ribs, and broil for 2-5 mins.

Last Year I was invited to a Zumba class, and after doing roughly 15 mins I vowed that I would never come back to the class again. My brain kept telling my body, “You can not do this.” Thank God I did not listen to my brain, because if I did, I may not be where I am now. One thing I look for in exercise is Fun. Dancing to the latest hits, and burning loads of calories is AWESOME. I am not the best dancer there is, but when I get in my Zumba mode, I turn in Beyoncé. 😅
So with that being said I have a few tips to help burn more calories in Zumba Class, I found this article awhile back and use it on daily basis. These tips helped me, due to the fact that I found the Zumba routines where kind of hard to learn at first, but once you get the hang of it…You have it. Hope this helps.
As I sit here munching on my Sausage Egg and Cheese McMuffin, I think about the 6 pounds that I lost last week, and how it felt so good to win the Money Pot for the week in my Biggest Looser Challenge. This week I did not do so well. I GAINED 1 pound. Now…I say to myself…1 Pound is not really a lot, but to someone who weighed 267 pounds, the 1 pound gain is a lot. I do not want to go backwards, I want to move forward.
The last two weeks have been really stressful for me, my Mom has been put back in the hospital, and things are not going very well. There have been some other changes in our lives for the better, but it’s still been quite stressful. So when stressful times hit, the best thing for me to do is get into the gym and work out, or go to a Zumba class, and dance my ass off. However I have not been to a single Zumba class this week, or even hit the gym, nor have I turned on my Wii to do my Wii Active….So what do I do now? I still have time to lose a few pounds before Mondays Weight In…I refuse to fall off the wagon due to a little stress, and change in our lives.
Last night I stumbled upon a post http://liftingbeautylife.wordpress.com/2014/11/13/a-lazy-persons-guide-to-weight-loss/ by Lifting Beauty, it was very helpful to me, because as a busy Mother and Workaholic I really don’t take the time to take care of myself as needed. Zumba and Gym are the only times that I really have to myself. On bad weeks like now, I have no time to myself and that adds on stress.
Reading these tips last night made me think about some things in a whole new perspective. There are some great tips in this post that I plan on putting to use. The main Rule for me to follow here is Rule #1..Food Prep, I was blessed last year to the have the opportunity to work from home… of course I jumped on the “Band Wagon” and took this opportunity, however it has its down falls, and the main downfall is im able to walk into my kitchen and feast upon whatever unhealthy snacks are in there for my family. I don’t do this a lot, but there are stressful times when this happens. Before I came home to work I would pack my lunch the night before and be good for the day, being home I no longer feel the need to do that. Well I think that is about to change. By Prepping my food I was able to lose more weight, and stay accountable for everything that I put into my mouth.
Rule # 2 Is also important to me as well, im a Pasta and Sweets Freak, I love baking for my family and during the Holiday Season, im the person who makes all of the deserts, so this is not an easy thing for me to do, however if I want to lose weight I must either stay away from the homemade sweets table or eat it in moderation, and for me moderation means I can have a piece of cake…Just not the WHOLE cake. Also recently I have discovered Gluten Free Pasta can be very tasty and also Wheat Pasta, so I have incorporated those into my diet when eating pasta, and I have even fooled my family, so they don’t even know that they are eating a kinda healthy form of pasta.
The other rules I follow on daily basis…Water Water Water for me only, I stopped drinking sodas 2 yrs ago, I may have a soda a few times per year but it’s not often. So im going to put these Rules in effect next week and lets see what happens, not to mention I’m getting back to Zumba class 3 times per week and my daily 1 hour gym visit. This is a must, not a maybe. I will get into those size 14 jeans by Christmas Day…that is my GOAL. I’m able to get into them now, however they do not look too appealing on me right now..LoL.
I know this will be a bumpy road, however I will not be defeated by Fat. I will conquer this and achieve my goals as I always do, it may take a few more years for me to get to a healthy place, but I will get there if the Good Lord Allows me to.

Do you often make too much spaghetti? If you’re a Mother like me with a large family to feed, sometimes you may make too much, but never too little. I often run into this problem when it comes to making spaghetti. On my Sunday blog I mentioned that I had leftover Spaghetti, and since I had a busy week, my Sunday meal was a little different. I pulled a meal together with some leftover spaghetti, that we had earlier in the week. I turned basic spaghetti, into a Creamy Cheesy Casserole Dish. This is a dish that you could make even if you do not have leftover spaghetti. Make your spaghetti as usual and follow these simple directions. There are other recipies on this dish, and you may want to try them, but this is my recipe and how I make it. Pre Heat Oven to 350 degrees. Start off with your basic spaghetti recipe
Add in your soften Cream Cheese, and stir untill creamy. Softening the cream cheese will make this much easier to mix together.
Add in Sour Cream and Mix untill Creamy
Make sure all ingredients are well blended, next add in the Italian Blend Cheese, and stir this in. Do not add in the Cheddar Cheese this will be saved for a later use.
Once all ingredients are combined together pour the casserole into a square baking pan, make sure to oil your pan with a small dab of olive oil. Once you have the spaghetti in the pan, add the Cheddar Cheese on top.
Bake in a pre heated oven of 350 degrees for 30 mins or untill cheese on top has melted. Once Cheese has melted let cool off for 5-10 Mins and enjoy this tasty Casserole.

Today is my favorite day, it’s Sunday. We all know on Sunday’s I make a big Sunday Dinner. Well this Sunday is a little different. This past week has been kind of stressful, so I was not able to get my dinner planned, or the shopping done. Today’s menu consists of Deep Fried Southern Chicken, and Spaghetti Pie, those are my main courses. However instead of me eating fried chicken before my weight in, I decided to play around with some flavors on baked chicken. This chicken was really good and flavorful. I was not sure if I would like it, but I knew if I wanted chicken for dinner, I would have to eat it. It smelled really good, and looked really good, and to be honest… it WAS really good. I would not advise feeding your children this. I gave my 6 and 8 yr old a small taste, and neither of them liked it. The chicken was light, and the taste was great. I wanted to try a different taste, so I pulled some spices out of my cabinet, and mixed up some flavors. Here is what you will need.
Preheat oven to 375. Lay chicken out on foil, and rub garlic on chicken. Next, rub Spike Seasoning , Cinnamon, Curry Powder, and Ground All Spice, all over chicken, add onions on top, and splash with 1/2 tsp. Of Olive Oil. Wrap chicken in foil, and place in oven for 1 hour and 15 mins.
Once Chicken is finished, let it rest for 15 mins, and Enjoy😋
