So I have recently started my 21 Day Fix program, yet again. I’m hoping for some really good results this time around. My biggest problem with this meal plan, is that I don’t get creative with my meals. I am going to keep a food diary here for the next 21 days, to show my food. If anyone ready this has any 21 day fix approved meals, please share. I would love to see some desserts also.

Today I have decided to restart my diet. With the Thanksgiving Holiday finally over and all of my sweets (Cakes and Pies) are almost gone, I have decided to hit the restart button YET AGAIN. This morning I am starting off with a really healthy breakfast using Mixed Greens, Mushrooms, Onions, and Turkey Sausage, and 2 Eggs. This is a really wholesome and healthy breakfast, and really gives a lot of energy to carry you thru the day. Hope you enjoy this short video.
Its Sunday Dinner time for my family, and even though im dieting, I still have to fix up a nice family dinner. Today I have decided to fix a delicious Chicken and Rice Dinner using Uncle Bens Wild Rice.
In order to keep the sodium level down, I do not recommend using the flavor pack with the rice, I normally put it aside and use it for another meal. Instead im using Campbell’s Cream Soups.
This is very easy to make, with little clean up. Lets Get Started.

12 Chicken Legs
1-2 Boxes of Uncle Bens Wild Long Grain Rice
1 Can each, Cream of Chicken, Cream of Onion, and Cream of Chicken and Mushroom Soup
Your Choice of Seasons for Chicken, I use Tyme and Rosemary
Wash and Dry and Season Chicken
2. Mix Rice and all of Cream Soups together
3. Layer the mixture of Rice on the bottom of a foil try, and on top of that add your chicken.
4. Cover with foil and bake for 1 hour on 350 degrees, once the hour is up, uncover and back another hour, until chicken is crispy and brown.
I will be pairing this with a Green Bean Cassarole, and Homemade Brownies for dessert. Hope you enjoy.
Well its been a few weeks since I have posted anything new. Its been a crazy few weeks for me, with up’s and down’s, High’s and Low’s. One thing has not changed and that is my love for cooking. I have made several new dishes over the past few days, and will be sharing those as well. One meal my family loves is BBQ Ribs. It takes a lot to make a great batch of BBQ Ribs, although I think I have found the secret to making a delicious, tender, succulent rib. If you enjoy “Fall of the Bone” ribs…Stay tunned.
Beef Ribs(Your Favorite Rib)
Sweet Baby Ray’s BBQ Sauce(Your Favorite Sauce)
1 Cup Brown Sugar
Rub ribs with Brown Sugar, and Seasoning Salt. Add in Garlic and Onions, and coat well. Place Ribs in a Crockpot, and cook on Low Heat for at least 8 hrs or over night.
Preheat Oven to 350…Once your ribs have cooked, transfer to a large Aluminum Pan, making sure to pour off any juice. Add your BBQ sauce, place foil on top of ribs and place in the oven for 30 mins, allowing the sauce to soak into the ribs. Once the sauce has soaked in, turn oven up on broil, and remove foil from the ribs, and broil for 2-5 mins.
Do you often make too much spaghetti? If you’re a Mother like me with a large family to feed, sometimes you may make too much, but never too little. I often run into this problem when it comes to making spaghetti. On my Sunday blog I mentioned that I had leftover Spaghetti, and since I had a busy week, my Sunday meal was a little different. I pulled a meal together with some leftover spaghetti, that we had earlier in the week. I turned basic spaghetti, into a Creamy Cheesy Casserole Dish. This is a dish that you could make even if you do not have leftover spaghetti. Make your spaghetti as usual and follow these simple directions. There are other recipies on this dish, and you may want to try them, but this is my recipe and how I make it. 8 oz Cream Cheese softened
1/2 Cup Sour Cream
Italian Blend Cheese
Triple Cheddar Cheese
Pre Heat Oven to 350 degrees. Start off with your basic spaghetti recipe
Add in your soften Cream Cheese, and stir untill creamy. Softening the cream cheese will make this much easier to mix together.
Add in Sour Cream and Mix untill Creamy
Make sure all ingredients are well blended, next add in the Italian Blend Cheese, and stir this in. Do not add in the Cheddar Cheese this will be saved for a later use.
Once all ingredients are combined together pour the casserole into a square baking pan, make sure to oil your pan with a small dab of olive oil. Once you have the spaghetti in the pan, add the Cheddar Cheese on top.
Bake in a pre heated oven of 350 degrees for 30 mins or untill cheese on top has melted. Once Cheese has melted let cool off for 5-10 Mins and enjoy this tasty Casserole.

Today is my favorite day, it’s Sunday. We all know on Sunday’s I make a big Sunday Dinner. Well this Sunday is a little different. This past week has been kind of stressful, so I was not able to get my dinner planned, or the shopping done. Today’s menu consists of Deep Fried Southern Chicken, and Spaghetti Pie, those are my main courses. However instead of me eating fried chicken before my weight in, I decided to play around with some flavors on baked chicken. This chicken was really good and flavorful. I was not sure if I would like it, but I knew if I wanted chicken for dinner, I would have to eat it. It smelled really good, and looked really good, and to be honest… it WAS really good. I would not advise feeding your children this. I gave my 6 and 8 yr old a small taste, and neither of them liked it. The chicken was light, and the taste was great. I wanted to try a different taste, so I pulled some spices out of my cabinet, and mixed up some flavors. Here is what you will need.
Ground All Spice
Preheat oven to 375. Lay chicken out on foil, and rub garlic on chicken. Next, rub Spike Seasoning , Cinnamon, Curry Powder, and Ground All Spice, all over chicken, add onions on top, and splash with 1/2 tsp. Of Olive Oil. Wrap chicken in foil, and place in oven for 1 hour and 15 mins.
Once Chicken is finished, let it rest for 15 mins, and Enjoy😋
Last Year I had research a lot of Pintrest recipes on how to make Smothered Pork Chops, and after going over several recipes, I came up with my own recipe of the Smothered Pork Chop. This is a BIG HIT with my family, the kids and Husband love these Chops, so here goes my recipe.
Pork Chops(Any Variety)
Natures All Season
Baby Bella Mushrooms
French Onion Soup
Dry Onion Soup Mix
Cream of Mushroom Soup
Pre-Heat Oven to 350 degrees. Wash and clean and season your Porkchops.
Flour Porkchops. Pour Oil into pan, and fry on each side for about 2-3 mins. Don’t allow porkchops to cook all the way thru. Once they are partially cooked, set the porkchops to the side and drain on a paper towel.
Once All of your Chops have cooked, layer them in a foil pan. Cut up your Mushrooms and Onions, and spread these across the Porkchops. I use one onion, and half of a pack of Baby Bella Mushrooms.
Next you are going Mix in a large bowl, French Onion Soup, Dry Onion Soup Mix(Both Packs), and the Cream of Mushroom Soup. Mix these untill you have a creamy texture.
Next Pour the Gravy over top of your porckchops. Place Foil on top and bake in a oven for 1 hour. Temperture my vary depending on Oven. Once the porkchops are done, serve on a platter and enjoy.
