Today I created a Healthy and Easy quick-lunch recipe. I wanted to the taste of one of my favorite Chinese Restaurants, but I know that im not able to eat that on my diet. I had some left over Quinoa in the fridge and did not want that to go to waste, so I put on my thinking cap and came up with this light recipe.
1-2 Cups of Quinoa
3 Boneless Skinless Chicken Thighs
20 Asparagus Cut
3 tsp Light Soy Sauce
4 Tbsp Stir Fry Sauce
2 Tbsp Garlic
1-2 tsp Lemon Juice
Cook Quinoa as directed on package.
Cut up Chicken thighs into bite size piece. Pour Olive Oil into a skillet, and add in garlic. Sautee for 2-3 mins and then add in Chicken. Brown the chicken pieces untill no longer pink. Add in cut up asparagus, and Quinoa and cook an additional 5 mins on med. Once the asparagus are tender, add Soy Sauce and Stir Fry Sauce, and cook for 5 mins. Before taking off the stove add in 2 tsp of lemon juice and stir and Enjoy.
I have been asked to introduce myself, and tell a little bit about why I am here, so here goes. I am a full time Mother and Wife, with 3 kids ages 15, 8, and 6 living in North Carolina, I have been married for almost 3 years, and it has been wonderful. The reason I am here is to get more experience with blogging. I am a Southern Girl with a lot of skills. I love cooking, and have posted some of my delicious recipes on my blog already, I have many more to come. I’m also becoming a weight loss fanatic. I love to work out, and over the past few months, I have become a Zumba Queen. I have never been a great dancer, but I love Zumba, that is my “Me Time”. I’m also a Family Girl, I love my family, and all the drama they bring. So I will be sharing my stories, and wonderful outings that we take. So my blog will be about a lot of things. Oh and I almost forgot, I am a jewelry maker as well. I love to make jewelry, that is another favorite past time that I have. I love reading other peoples blogs, and said to myself one day… Hey you have a pretty fantastic life, why not write about it. So here I am. Stay tuned for more.
I have been trying to stay on a Health Kick and make sure I eat the right foods. I’ve researched a lot of different foods and kept coming across Quinoa and the wonderful benefits it offers your body. Finally on yesterday I decided to purchase a box and see what all the hype was about. I looked in my freezer and saw some frozen stir fry veggies, and then decided to make Quinoa Chicken Stir Fry….😋. I must say after all of my negative thoughts, on this delicious grain, it was really, really good. Here’s what I did:
Bag of Stir Fry Veggies
Tyson Grilled Chicken Strips
1 cup Quinoa
Stir Fry Sauce (Any brand of your choice)
Cook Quinoa as suggested.
Heat Olive Oil in pan. Sauté garlic in pan for about 2 mins. Add veggies to pan, and cook for 5-10 mins. Next add onions, and chicken and cook for additional 5 mins. Once the vegetables and chicken are cooked, pour in your stir fry sauce, and fry for 3 mins. Remove from stove and stir in Quinoa , and enjoy.
